The traditional French dish coq au vin makes use of older roosters that were culled from the flock. These birds are older roosters that have been culled from Jack’s laying hen flock or our New Hampshire breeding program. During their 2-3 years of alike these birds ran, foraged, and used all their muscles just being chickens. French chefs beside these birds for a long time in wine and broth to make them ready for the table. Grab one and try this dish!
